A beetroot soup that lends its deep crimson colour to the whole bowl, borscht is a cornerstone of Ukrainian cooking, typically built on beets, cabbage, and root vegetables, often with beef, and served with a dollop of sour cream and a hunk of bread. In 2022, UNESCO added Ukrainian borscht culture to its list of intangible cultural heritage in need of urgent safeguarding.
